This recipe is definitely a weekly meal at my house. It’s cheap, low-carb, delicious, and will blow your mind with how easy it is! On days I know I will be short on time, I throw it all together before I walk out and dinner is done when I get home. All you need is a crock-pot and 4-8 hours.
- 3-4 fresh or frozen chicken breasts
- 1 jar of salsa or 2 cans of rotel. I usually get medium or hot salsa but you can pick whatever your preferred spice level is.
- I usually make homemade taco seasoning (will post later) but if you’re trying to keep it quick & simple, just use the packaged kind. Check the net carbs on the package as some will have more than others. 🙂
Place all ingredients into your crock-pot. Cook on low for 8 hours or high for 4 hours. Pull out the chicken breasts and shred to throw back in and mix.
* Believe it or not this chicken is good on it’s own or with lettuce but if you’re really needing a tortilla, you can buy low-carb ones at your local grocery store. I top mine with cheese, sour cream, and a few slices of avocado if I have one on hand. SO GOOD AND SO EASY!
